To create homemade Kaju Katli for the festive occasion of Diwali, start by grinding 1 cup of cashews into a coarse powder, aiming for a slightly granulated consistency. In a mixing bowl, combine the ground cashews with 1/4 cup of powdered sugar and 1/4 cup of milk powder, ensuring a thorough blend of these dry ingredients. Gradually incorporate 4 to 5 tablespoons of milk into the mixture, adding a small amount at a time, until a smooth dough forms. Roll out the dough on a plastic sheet, shaping it into a thin, even layer. Then, cut the rolled dough into traditional diamond shapes. Your homemade Kaju Katli is now ready to be enjoyed, making it a perfect treat for Diwali festivities.

Mothanthal: The second, Mohanthal, with just four ingredients, offers a delicious option for those celebrating. To prepare it, start by sieving 1+1/2 cups of besan (gram flour). Add 4 to 5 tablespoons of Desi ghee and 4 tablespoons of milk to the sieved besan, mixing well until it resembles coarse crumbs. In another kadai, prepare syrup by adding 3/4 cup of sugar and 1/4 cup of water, achieving a 1-and-a-half string consistency. Introduce kesar food color and 1/2 teaspoon elaichi powder, mixing well before turning off the flame. Combine this syrup with the besan mixture, stirring until it thickens. Transfer the mixture to a greased tray, garnish with pistachios and nuts, and refrigerate for 30 minutes. Once set, cut into pieces and relish the delightful Besan Ki Burfi during the festive Diwali celebrations.
